Harvesting and vinification: The hand-picked grapes go through a manual selection.
The entire wine making process takes place at a controlled temperature;
a first spontaneous fermentation is followed by separation of the seeds.
After 30 days of maceration, the malolactic fermentation takes place in steel.
Aging: 18 months in large wooden barrels (40hl).
The wine ages 6 months in bottle before being released onto the market
