Harvesting and vinification: The hand-picked grapes go through manual selection.
The entire wine making process takes place at a controlled temperature;
the spontaneous fermentation is followed by 20 days of maceration.
The malolactic fermentation takes place in French barriques
Aging: 18 months in French wooden barrels and final refinement in steels on fine lees.
The wine ages 6 months in bottle before being released onto the market. Numbered labels
